“Jiro Dreams of Sushi” highlights the immense skill needed by the arguably best sushi chef in the world, Jiro Ono.

The movie also deals with the process of the sushi master trying to hand down his legacy to his younger son, who is a great sushi chef but knows that he will never reach the excellence of his father. Drool-inducing close-ups of the different types of sushi highlighted in the documentary showcase the best of the craft, as the documentary shows the process of creating each of Jiro’s masterpieces from the fish market to plate of his customers and how he spends hours every morning preparing for each dish.

Even the customers are interviewed, and they talk about how it was worth making a reservation to his restaurant a few years in advance to taste his food.

The pressure of passing down Jiro’s legacy also adds tension to the documentary, showing the stress placed upon Jiro’s oldest son. As Jiro grows older he continues to struggle to reach his image of “perfection,” and the film addresses how his son will need to retain the legacy after his death.

“Jiro Dreams of Sushi” also has an amazing soundtrack of classical Japanese orchestrations that adds to the process of the elegant craft of a sushi chef. The simplicity of the film also fits quite nicely with the profession, and it’s clear a lot of work went into making sure that the style of the movie fitted Jiro’s style.

Quick and precise with his knife, watching Jiro slice each fish provides a sense that he is on another level compared to all other sushi chefs. Not only is this documentary stunningly beautiful, it also captures the everyday life of Jiro perfectly and his hopes for the future. There’s no question that this is one of, if not, the best documentary that Netflix has to offer.
